Tania Smoked

Farmhouse brie smoked at predetermined tempera-tures in hot smoke from manuka chips. The white candidium mould is turned a deep brown and the outside will melt a little.

Bay Blue

Cheese is set with Roque-fort and then carefully pierced & stitched at various times during the curing process.

Komene Kass

The classical Dutch cheese set with cumin seeds. Made in smaller rounds than the traditional Dutch cheese & enrobed in yellow wax.

Mt Chargill Tudor

Because of the curing and the subsequent waxing the moisture is kept in the cheese and this coupled curing process produces this unusual cheese. Flavour is full & sharp.
